Refined flour – 2 cups
Ghee – 1/2 cup
Baking Powder – 1 tsp
Mawa – 1/4 cup
Pistachios – 10-12 finely chopped
Almonds – 3 finely chopped
Cashews – 3 finely chopped
Powdered sugar – 2 tbsp
Sugar – 2 cups
Cardamom Powder – 1/2 tsp
Ghee – for frying
Take out all purpose flour in a vessel. Add baking powder to it and mix it well. Then add ghee to it and mix and knead soft dough with cold water. Cover the dough and keep it aside for 10-15 minutes.
To make the stuffing, place the pan on the gas and add m awa to it. Fry the Mawa slightly. Now keep it in a pot. After the mawa cools down, mix 2 tablespoons powdered sugar, finely chopped cashews, almonds, a little cardamom powder.
To make syrup
Put 2 cups of sugar and 1 cup of water in a large pot and keep the sugar on the gas. Cook the syrup till it becomes a wire. Now keep it until it cools down.
To make sand
Break small pieces of dough and make small balls. Then pick a dough and make it round by giving it a bowl shape and put 1/2 tsp mawa stuffing in the middle. After this, lift the dough around and close the stuffing well. Make all the sand like this.
To fry it, put ghee in the pan and heat it lightly on low flame. Add sand and fry till it becomes light brown. Fry all the sand like this.
Balushahi is ready and garnish with pistachios.
