When you are losing weight and want to make your boring food a diversion with a healthier option then no other food other than beetroot can be a better option. Beetroot is a good source of fiber that helps you feel fuller for longer and helps in weight management. The beet chutney turned out to be a little sweet and sour and, thanks to a lot of garlic and chilli, pungent and hot. All in all, exactly how the sauce should be. Beetroot, peel and grated – 1
Oil – 1 & ½ tbsp
Cumin seeds – ½ tsp
Asafoetida – a pinch
Urad Dal – 1 teaspoon
Chana dal – 1 teaspoon
Garlic, chopped – 5-6 pods
Dried red chili – 5-6
Tamarind pulp (without seeds and bile) – 1 tsp
Mustard seeds – 1 teaspoon
salt to taste
Method: First of all, you have to soak tamarind pulp in about 2 teaspoons of hot water. Place a pan on the gas flame and heat 1 tbsp of oil over medium heat and add cumin seeds. When they start changing color and pop, add urad dal and chana dal. Fry till it becomes golden, and then add asafoetida, followed by garlic. After that stop the garlic for a few seconds till it turns golden, after that add dry red chilli to it. Once they start to flourish, add grated beetroot and fry till cooked. It should not be more than 10 minutes. Add a pinch of salt to speed up the cooking process.
After the beetroot is cooked, turn off the heat and allow it to cool to room temperature. Then, make a paste by mixing tamarind water in the beet mixture. Smooth it as needed, add water as required. Finally, add salt (as required) and close with a tempering of mustard seeds.
